I’ve had no issues with the better quality unbleached parchment they sell at Whole Foods, and it is robust enough to use for three or four bakes, so it ends up costing less than the cheap ones. I always crumple up my parchment paper and get it (slightly) wet with cold water before putting the dough on top. It still gets “crispy” and breaks after baking but I’ve never had it stick to the bottom.
